This book is great, it explaines what type of convection oven, what kind of pans to use & not use. Finally a book that doesn't just give recipes but also explains a lot moor. Till now there was very little on convection cooking. It has great recipes, will worth the money. Glad I did.
Great book ---especially for one who is a beginner in Convection cooking! The basic information is extremely helpful. The recipes cover many areas of cooking (vegetables, meat, bread, etc) and can be used as examples of how to convert regular recipes to convection cooking. mj
Being new to convection cooking I was looking for a well written cookbook with easy to follow instructions and ingredients. Ms. Donovan is to be commended for meeting and exceeding my expectations for a good basic instructional cookbook. I just wish she had included some photos of the actual dishes she so richly describes. Overall well done and I recommend this fine cookbook highly. Robert H. Loved the section with advice and instructions on using a convection oven. The recipes concentrate on more vegetarian diet items than meats. But the essential chicken, beef roast, turkey and pork are there. Now that I have a better idea about using the convection oven, I will adapt my own recipes.

This is just the book I needed to transition to using connection cooking. I’m enthusiastic to begin the adventure. The recipes are not so simple as to be boring; but aren’t crazy/strange. The author is great at explaining how to adapt the standard recipes you have at home to use with a convection system. It is exactly what I was looking for!
Not as helpful as I had hoped. The information in the front of the book is great but the recipes, not so much.,
